You do not buy milk by the gallon in Italy. You buy it in liters. It is also not typically kept refrigerated. They use a sterilization procedure called UHT (Ultra High Temp). It can be kept on the shelf for several months and only needs to go in the fridge after you open it. The taste is not really different and I found the switch pretty painless It comes in whole milk (intero) and two percent (parzialmente scremato).
